Delicata Squash-I bet you've never heard of it!

Delicata Squash

So this week in my CSA box I received a Delicata squash. It is an amazing creamy delicious little squash. It is similar to a butternut squash but a lot easier to deal with. Thus I think it is much better than a butternut.

Butternut's tend to be huge with thick skins and can be a pain when you have to hack it apart. Since our family is so small this smaller squash is perfect. Plus it is so creamy after cooking!

With this sweet delicata squash all I had to do with it was wash it, chop it, scrape out the seeds, slice it and bake it. So easy!

Roasted Delicata Squash Recipe
Serves 2-4 as a side dish

Ingredients:
2-4 delicata squash, depending on size
2 tbsp olive oil
salt to taste

Preheat oven to 425 degrees.

Clean the delicata squash by running under warm water and scrubbing away dirt with your hands. If there are any hard spots on the squash, scrape them off with a butter knife.

With a sharp knife, cut delicata in half lengthwise. This should be easy and not require any crazy hacking, wacking or knife smacking. With a spoon scoop out the seeds and discard (you can save these and prepare them like pumpkin seeds to put in your granola).

Cut each delicata half into 1/2 inch segments, creating moon-shaped pieces with slight bumps around the curve.

Arrange the pieces in a single layer in a metal baking pan and coat in 2 tbsp olive oil. Too much oil can make the squash soggy. Salt gently. It’s okay if the pieces are a little crowded, but try to maximize the surface area of the squash touching the pan. The browning only occurs where the squash and pan meet.

Place in oven and roast 10 minutes. Using a spatula (I use tongs for most veggies, but delicata squash are easily squished and it can be tricky to flip them with out compltely squishing them.) Turn the squash in the pan so the light sides are now touching the pan and the brown sides are facing up.

Continue roasting, turning every 7-10 minutes until both sides of the squash pieces are golden brown and when poked with a fork the texture is creamy, all the way through. It should take about 25-30 minutes total.

Serve as a side dish with the rest of your dinner. I served mine with barbequed chicken drumsticks and salad!

Dinner Rolls

My friend Robin made these last night and I am completly in love! They are so easy I may make them all the time and will probably gain 25lbs in the next week!

The dough can be made by hand, in a mixer or a bread maker...I will give you the mixer version!

Ingredients:
1/2 cup warm water (110 degrees F)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 teaspoon salt
3 3/4 cups all-purpose flour (I used half whole wheat flour)
1 (.25 ounce) package active dry yeast or 2.5 tsp yeast from the jar

Directions:
Mix water and milk, nuke in the microwave for 1 minute and 15 seconds, or if you don't use a microwave like me you can heat it in a pan on the stove - just don't scald it. I then pour it into the bowl of my KitchenAid mixer. Stir in the sugar until dissolved, then stirred in the yeast. After it gets all foamy, about 10 minutes, mix in the salt, butter and egg. Turn the KitchenAid on and start adding the flour a half cup at a time.

Put it in a warm, oiled bowl to rise. I let it rise for about 45 minutes in the bowl, then punched it down, divided it into 12 balls (I didn't feel like making crescents) and let it rise for another hour, then bake for 10 minutes at 400 degrees, (I kept my oven at 350 degrees because it cooks really hot). They turned out like something from a bakery. Also, you can brush them with melted butter after if you'd like but they really don't need it. If you want them to be a deep shiny golden brown, brush them with egg yoke right before cooking.

Minestrone Soup or Whatever I have from the garden soup!

This is one of my fall favorites! Most people call it Minestrone soup or health in a bowl. But I like to call it Whatever I found in my garden or CSA box today soup! This is such an amazing soup, hearty, healthy and easy to make. It is a great dinner during the fall when things can be pretty crazy...kids are back to school, soccer practice, dance class etc...

Also you can substitute vegetables depending on what you have or what you like. You can use Swiss chard or kale instead of spinach if you wish. You can also cook it in a crock pot if you would like. I prefer to make this soup on the stove and let it simmer for about 45 minutes before adding the pasta. The crock pot however is so convenient when you are working all day and want to come home to a cooked meal. This is also great with browned venison burger, mini turkey meatballs or even some sauteed crumbled turkey sausage.
Ingredients:
3 tablespoons olive oil

3 cloves garlic, chopped (more if it is flu season)
2 onions, chopped
2 cups chopped celery
5 carrots, sliced
4 cups low sodium chicken broth (or vegetable broth for vegetarians)
2 (28 oz) can stewed tomatoes (I like the Italian kind)

1/2 cup red wine (optional)
1 cup canned kidney beans, drained (You can use cannellini or navy too)
1 (15 ounce) can green beans or fresh ones from the garden or your CSA!
2 cups baby spinach, rinsed (or fresh Kale)
3 zucchinis, quartered and sliced
1 tablespoon chopped fresh oregano
2 tablespoons chopped fresh basil
salt and pepper to taste
1/2 cup seashell whole wheat pasta (if watching your carbs or blood sugar you can omit)
2 tablespoons grated Parmesan cheese for topping
1 tablespoon olive oil

Directions:
In a large stock pot, over medium-low heat, heat olive oil and saute garlic, celery, carrots and onion - saute for 4 to 5 minutes.
Add chicken broth, tomatoes, bring to boil, stirring frequently. If desired add red wine at this point. Reduce heat to low and add kidney beans, all the veggies, oregano, basil, salt and pepper. Simmer for 30 to 40 minutes, the longer the better.

Throw in noodles and cook until tender. Ladle soup in to bowls and sprinkle Parmesan cheese on top.

Kristi's Favorite Cucumber Salad

I love summer with all the cucumbers and zucchini growing in my garden. I'm always looking for great ways to make them and if I find a way without cooking that is even better.

Ingredients:
4 cucumbers, thinly sliced (I use a mix of cucumber and zucchini)
1 small white or purple onion, thinly sliced
1 cup white vinegar
1/2 cup water
3/4 cup white sugar (or zylitol)
1 tablespoon dried dill, or to taste

Directions:
Toss together the cucumbers, zucchini and onion in a large bowl.

Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions.

Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.

Things I've learned

So I've learned something about myself since getting married and having children. I know you're surprised about this...Haha

One thing I've learned is to let go. I used to be very systematic about things. For example; everything in my cupboards always went a certain way. You could look in my cupboards on any given day and it was complete organization. Small plates stacked on top of bigger plates, bowls nicely nesting inside one another. It was cozy cupboard love.

Then I got married and found plates on top of bowls and little plates under big plates, you get the point. It used to drive me insane. Now I've learned to let go and be happy the dishes are clean.

Now a clean dog...that is another story.

I also used to hang my clothes according to color. It was like looking at a happy bag of skittles everytime I opened my closest. Now I'm lucky to get the clothes hung up. Sometimes I'm in such a hurry to get it all done, while the children are not needing me, I fold them inside out and stuff them in the drawers.

Again letting go. I do cringe a little bit from time to time. But then I think, what is more important? Playing legos with my 3 year old or having complete order in my house? There will always be housework but my 3 year old will someday be 18 and leaving the nest. I can organize my cupboards then.

*Side note: this does not mean it looks like a bomb or in my case 4 Baums went off in my house. I do clean just don't organize every single detail of my house. It is a more macrocleaning then a microcleaning (yeah I took economics in college.)

It has taken me awhile to get to this point but it all comes down to what is important in life. When I get to Heaven is God going to say, "Well done thy good and faithful servant! You maintained an organized closet and cupboards. However, you were too busy mainting those things to truly nurture your children." Or is he going to say, "Well done thy good and faithful servant! You have raised two amazing godly woman."

Boating with kids can be a grand adventure or a total disaster! There are a couple things you must have to make it a success.

#1 - Good Weather! Be sure to check the forecast ahead of time. You really do NOT want to get stuck in bad weather with little ones.

#2 - Larger boat with an enclosed cabin
#3 - Heater on above mentioned boat - cold kids means cranky kids. Cold mama means super cranky mama!
#4 - Lots of great snacks - for some reason everyone is hungry all the time while on the boat. Donuts are a must have according to my oldest daughter!
#5 - Juice boxes - keeps juice from spilling all over the place when the boat rocks.

This is mama sans a cup of coffee but with super awesome camping hair

#6 - Coffee - lots of coffee to keep Mama awake and warm.

#7 - Fishing poles - kids LOVE to fish. Mama LOVES to catch fish! Or just give the kid a bait fish to play with, that always works too!

#8 - Sleeping bags and blankets! Kids love to play in them and when mama gets tired she likes to roll up in them and let dad run the show while she naps.

#9 - A rubber Raft - it is great for rowing to shore but can also be filled up with water to make a great swimming pool or bathtub!

#10 - Portable DVD player - when they get REALLY bored I bring this out as my secret weapon. But use only as a last means of sanity.

#11 - Last but definitely not least! Always make sure your little fish are wearing their life jackets! They must wear them if outside of the cabin or if you are in rough seas! Remember kids don't float and they sure look cute all squished in a life jacket :) hehe Start them young and as they grow they don't mind it at all!

Jeremy put house projects on the back burner this spring but now he is back to building! It's really neat to see the old come off and the new going up. For me it's really hard to mentally visualize how things will look once the project is complete. Now with the framing going up I can really visualize it!

The year 2011 started off with a lot of changes for Da Baum house!

With the addition of Katie Lynn, Kristi quit her job-Yahoo!!!

Jeremy bought a new boat! 22' Hewescraft!

We planted a large garden! Broccoli, tomatoes, cucumbers, zucchini, asparagus, carrots,
peas, lettuce, strawberries, blueberries, roses, flowers you get the point

We've been enjoying life!

With the addition of the new boat and the great weather we've put the house remodeling on hold for awhile! Instead we've gone on some amazing camping and fishing adventures! One super sunny weekend we headed south of Ketchikan to a place called Boca de Quadra where there are these amazing white sandy beaches we love to play on!

Katie Lynn Enters Our World

On December 29th baby Katie finally entered our world! She weighed 8lbs 10 oz and was 21.5 inches long. Katie is the sweetest, best baby!! She already sleeps 5-7 hours a night and rarely cries. Big sister Hannah is completely in love and adores her baby sister. She gives Katie about 300 kisses and hugs every day!

Hannah LOVES to dance and sing. She always has a song on her lips and often it is one she has made up or a compilation of multiple songs.

While mine was drying Maria put Hannah in the chair and styled her hair. Hannah was so excited. When she got home she pranced around and said, "Daddy look at my beautiful haircut."

ok I am pretty sure the brown dog is prego. We had a REALLY bad heat cycle this time. Jeremy let her loose three times and once she actually broke down sheet rock to get out. Let's just say she is lucky to be alive because her dad almost put a bullet to her head!

So here at the end of the month we should have puppies. So who wants a German Pointing Lab or a German Wolf Dog?? Free to a good home.

Funniest part is they are due at the end of the month...about the time I have to go to Anchorage for meetings! Ahhahaha Jeremy is going to have so much fun being a single dad with new born puppies! I just hope he doesn't pull a farmer Bob on the puppies...

Cruisin'

We just returned from a 10 day Caribbean cruise!

It was a last minute thing, we literally packed up in 2 hours and caught a plane headed south!

We dropped Hannah off in Lousiana to play with her cousins for the week. As you can see she didn't miss us too much.
Then we headed to Ft. Lauderdale to catch our ship. However, we missed the ship because we got stuck in a snow "storm" in Memphis, TN. Yes crazy huh! It snowed for about 5 mins then turned into rain but that shut the whole airport down. Ugh don't even get me started...But we were able to fly to St. Thomas (at our own expense) to meet the ship. We made lemonaide out of the lemons we were dealt.

In St. Thomas we stayed at a little B&B called the Galleon House it was a very clean and cute little place! We did a little sight seeing in St. Thomas but is was a pretty populated island so the next morning we hopped a ferry to St. John. We loved that island. Most of it is federal park land so only about 500 people live on the island. We rented a tent and camped at Cinnamon Bay! Check out their website and you can hear what it sounded like at night :) It was so much fun!
Also while in St. John we hiked the Reef Bay trail which was beautiful. Ruins...

The next morning we drove around the island in our rented jeep. It is such a beautiful island I can't wait to go back. The beaches are pristine and the water is perfect for swimming & snorkeling. I told Jeremy I wanted to move to that island!! Can't I trade one island for another?? Instead of bears and deer they have wild chickens, donkeys and goats all over the place :) After that we caught the ferry back to St. Thomas and boarded our ship!

The next port of call was St. Kitts where we did the St. Kitts Volcano Hike of a lifetime!

Yes I actually hiked to the top of that mountain, Mt Liamuiga ! It was about 6 miles round-trip with an over 3,700 ft elevation gain! Killer hike but definitely worth it. This was not your everyday cruiseship excursion this was intense, the kind of hiking Jeremy does when he is deer hunting!

This was the trail! You literally are crawling through roots and scrambling over rocks. Quite a hike!Neat trees! It is a cotton silk tree. Their trunks help catch the water! Pretty amazing! At the top looking down into the crater of the volcano! Pretty amazing view from up there! Our guide O'Neil! This guys is 58 years old, has 9 kids and does this killer hike 1-2 times a day!! I think he will live to be over a 100! He was amazing. He set this killer pace but did stop every so often to tell us all about the flora & fauna. He knows his stuff!

I know it has been FOREVER since I last updated. For that I apologize. Jeremy & I have both been out of town for work but now we are all home! So now I have time to finally update you with some recent photos!

The next couple of pictures are from when Hannah visited Hunter Clause (our friend Hunter pretended to be Santa Clause) during story time at the library. As soon as Hunter walked in the room Hannah ran straight to him, gave him a big hug and said, "Hi Santa Clause." It was really cute, she was not the least bit afraid. She was really excited when he gave her a candy cane! We don't do the whole Santa thing but it was fun! The library also had a fun craft time where the kids made Christmas ornaments

20 Months of Joy

Hannah is now 20 months old! How did this happen so fast? In 4 short months my little baby will be 2 years old! It seems like just yesterday I was posting her newborn pictures, now here are some of her at 20 months!

Last night Jeremy was working on the roof (pictures to come later). Hannah wanted to play with her dad so she was standing at the door yelling up at him. "Daddy, COME! Daddy COME!." Well he just smiled & waved. So she proceeded to yell, "Daddy COME!!!!" some more. He didn't come. So then she said, "Daddy Listen! Daddy Come!" I almost fell over laughing!

Latest Happenings

Sorry I haven't updated you all lately! Jeremy has the computer I put all our pictures on so I can't download any pictures! He has been gone since the 10th and doesn't come home until the 28th. He is out looking for naughty hunters!

Well since I don't have any pictures I thought I would tell you about our lives lately!

Kristi has been working 10 hour+ days for the last three weeks. It is kind of good Jeremy has been gone otherwise I think he would miss his wife way to much. Plus dinner would never be on the table and then he would be really sad :)

I have been training people at work and luckily all of them are here now and soon everyone will be up to speed. Then I can go back to hopefully working only 8+ hour days :)

Hannah is getting cuter every day. She does miss spending time with mom & dad but she has adjusted well. Plus, she gets to do way cool things with her nanny & her kids! Today they walked around Ward Lake. Hannah, of course, collected about 1 million sticks on her way.

They also visit the old folk’s home several times a week. One day Hannah ran down the hall into a ladies room. When her nanny got to her she was pointing at an old lady sleeping. Hannah kept saying, "nigh, nigh" meanwhile pointing at the poor sleeping lady.

Hannah is talking up a storm. She can repeat pretty much anything you say. She amazes me with her creativity & humor! The other day I showed her a pair of her pants and she said, "Oooo Cute!"

She sure has an imagination! Today she was eating a strawberry but wanted the top off. So I pulled the top off and a little of the inside came off. She pointed at it and said “elephant.” I was confused. I looked down at it and sure enough it semi-resembled an elephant!

She also has become quite the prayer warrior. Every time we pray she always has her list of people/things she wants to pray for. Last night she wanted to pray for her socks & nose! Every day she makes sure we pray for "gammas owie & dada on da boat."

She also loves to read books. She will sit down with a book and read away. Most of the time she just babbles as fast as can be but every now and then I catch a word or two.

Hannah's favorite foods include: tomatoes, broccoli, noodles, salad, strawberries, yogurt, and of course ice cream (I keam is how she says it).

She does not like watermelon, peas, green beans or corn.

Hannah really loves to sing! Everyday on the drive to work we sing multiple songs. Everything from "The Wheels on the Bus," to "This little light of mine." We also made up a song similar to the kid’s song "Halleluiah, Halleluiah, Hallelujah". It is called "Hannah Lou, Hannah Lou, Hannah Lou" then Hannah yells, "Paise ye da Lord!" It is super cute!

Hannah loves to dip her food in anything she can get. Ketchup, ranch, bbq sauce, yogurt etc. She will sit there and say, "moe dip, moe dip." Over and over till you get her some dip!

Hannah is definitely her father's child. She would spend ALL day outside if we let her. She grabs her bucket and proceeds to fill it with whatever treasures she finds. The other day we spent 2.5 hours playing on the beach. We filled her bucket with fish, baby star fish, hermit crabs, rocks, dead baby Dungeness crabs, beach glass and more! We had so much fun exploring & splashing in the tide pools.

I really have to keep a close eye on Hannah these days. She is SOOO independent and will just take off. The other day I was watering plants in my greenhouse. Hannah was collecting sticks. The next thing I know she had made it down the hill and was running around on the beach. Thankfully her trusty dog Shylo was herding her back toward me.

Hannah's favorite movie right now is Cinderella. She will grab the box and say, "Cinderellie tune." She will watch almost the entire thing!

She loves to help in the greenhouse. Before daddy left he taught her how to pick lettuce. The other day I caught her picking lettuce and feeding it to the dogs!

Hannah also decided she wants to wear panties! So we went to Wal-mart & she picked out her own panties. Of course they were Cinderella panties! The first time I put them on she was SOOOO excited. She screamed "YEAH PANTIES!!" Then she ran to the mirror to admire her panties. She wants to wear them everyday but she has yet to get the concept that she needs to go pee-pee in the potty when wearing them. She slowly is getting it. The other day she told me she had to go potty but then wouldn't sit on the potty. Instead she just pee'd in her panties. She was so sad when I made her take them off and put on a diaper. She cried, “no diepee.” I don't think she is quite ready for potty training. Plus, our life is a little too wild right now to begin that.

God has surely blessed Jeremy this year at work. Recently the Anchorage Daily News ran a story about one of his big cases!

I think it is awesome how my husband will go to the extremes of sitting out in the cold, without a fire, to watch over all God's creatures. It is good to know he is doing his best to make sure there are plenty of bears for Hannah to kill when she grows up! :)

Jeremy also received the NASBLA's Boating Law Enforcement Officer of the Year for Alaska! On his plaque it says he received it in recognition of outstanding public service, unmatched professionalism in marine law enforcement and personal commitment to ensuring safe & enjoyable recreational boating! His name is shown on this website.

Mothers....Do you ever have moments where your children make huge messes and you aren't even sure where to begin? Well we had several of these during our Peruvian expedition.

No that is not chocolate. Yes that is poop.

After we stripped her down and threw her in the shower I just sat their saying now what? There was poop EVERYWHERE. Her entire bed was covered, the sides of the port-a-crib were covered, the top rails of the port-a-crib were covered. Poop was in abundance!

It gets better. Our hotel did not have any sort of laundry. They send all theirs out. What is even better, there was not a laundry mat to be found for miles.

So I jumped in the shower with a bar of bath soap and started scrubbing away. Her blanket, pillow, sheet, baby doll etc. Then I found some limes we had and cut them in half and rubbed them all over everything. That helped with the smell. Oh the smell it was AWFUL. Then we hung them on the balcony to dry in the sun. We looked so WT!

Then on our way back to the USA we were getting ready to go through customs when we smelt something. Yup more poo.

It was in her onsie all the way up her back and then seeping out her legs. Oh geez. I had no idea what to do with that much poo. Where do I even begin?

I took her to the bathroom, which had NO paper towels just a blower. So I used about one million baby wipes. Meanwhile making my daughter sit in the sink so I could bathe her. The sink was covered in poo by the time I was done. I feel bad for the people who had to clean up after us. But that is what they get for not giving me paper towels!

I had a plastic grocery bag in my diaper bag just in case we had another blow out. But I ended up throwing her onsie away because it was SOOOO gross.

We had a fabulous time at Disney World with Jeremy's family. It was pretty wild at times but overall it was an enjoyable experience and Hannah LOVED it! I think she may have liked it more than her older cousins :) We did Magic Kingdom one day and Animal Kingdom the other day.

Then we hopped a plane to Peru last night and arrived here safely early (1am Alaska time) this morning. We spent today sleeping, laying by the pool, eating yummy Peruvian fruit and Kristi got a fabulous Peruvian facial and can't wait to have her pedicure & manicure tomorrow! Hannah has been enjoying playing with her grandparents and has already gone on an adventure to the beach with them!

I will get some pictures posted ASAP!

Snowy Day

It has been snowing here for days! Some parts of the island have gotten 30 inches of snow in the last 3 days. Luckily we live in the bananna belt and all the snow flies over us.

We did get enough snow to have some fun though. Luckily for Christmas Hannah got her very own toddler toboggan. She LOVES it!

Two weeks ago Hannah & I, along with Marie & her little girl Sierra, went to kids time at our local rec center. Hannah had a BLAST!

Joel Adam Day

Joel Adam Day was born this morning at 3:30a.m. Pictures to come soon! He is a beautiful healthy boy with dimples but he is a chunker! His birth weight was 10lbs 3oz, he doesn't even fit in newborn diapers and barely fits in newborn clothes!

Kristina is doing good. She had a rough go of it but she did amazing. If all goes well they will be home tomorrow afternoon.

Sunday after church we went out on our annual Christmas tree hunt. This year however, we went minus the shotgun, Jeremy sold his shotgun awhile ago. So this year we had to use an old fashioned saw to kill our tree.

All Done

We have entered a new stage in life and it is bittersweet. My baby is definitely not a baby anymore. It is amazing. Just 13 months ago she was just a little bundle who didn’t do much but eat, sleep and poop. Now she is walking, talking and full of curiosity. She is her own little person.

As a step into toddler hood, I decided to pack up the bottles. Hannah hasn’t used a bottle in a couple weeks and she doesn’t seem to miss it. I decided to stop using bottles a couple weeks ago after talking to a friend who is a pedialdontic (kid’s dentist) assistant. She told me about a couple kids she had worked on that day. She didn’t know I still used a bottle; she was just sharing about her day. It was sad. They did a root canal on a 2.5 year old who still drank out of a bottle. Her teeth were rotting because of the bottle. Sadness…

This encouraged me to take the leap. We had been doing bottles only morning and night and I thought it would be hard for her to give those up, but it really wasn’t. I think I cared more about it than she did, I liked that time of closeness. Hannah didn’t seem to mind at all. Instead of a bottle I give her a sippy cup now and we still cuddle while she drinks her milk.

She is such a big girl now, next thing I know she will be off to school.

California Fires

My heart goes out to those in California facing fire danger as two (NOW 3 as of Sunday) major fires are running rampant. Thousands of people have evacuated their homes and over 950 homes have been destroyed.

However, I can't help to think this is happening for a reason. I think of Proposition 8 dealing with gay marriage. The majority of people in California voted to make same sex marriage illegal. Then people started marching and crying and whining. They are so blinded by their sin. They are all over the TV trying to convince the rest of the world that their sinful ways are right & just. I have heard some say it is their constitutional right to marry who they want.

I think of those who wrote the constitution. They must be rolling over in their graves. They did not design the constitution to promote sinfulness.

Over half of my family lives in California and I am thankful they are the Christians who have voted against same sex marriage. But it saddens me how so many of the people of California have forsaken God.

These fires remind me of Sodom & Gomorrah. Genesis is very clear that the sin of Sodom, homosexuality, brought on the destruction of the city. The Lord let fire and brimstone rain down on the city, all of it inhabitants, save Lot and his two daughters, were destroyed. I can’t help to think God has allowed these fires to wake or even warn the people of California to turn from their sinful ways.

Please be praying for those in California. Pray God will open their eyes to their wicked ways. Pray they will renounce their sinful ways & flesh and set their faces Heavenward. Pray for the Christians of California to not be complacent but to stand up for Godliness, to endure persecution for what is right & true.

Hannah and Kristi returned from a trip south last week. It was a blast. We spent time with both friends and family.

It was a lot of fun.

Hannah started walking while in Tennessee. One day she just stood up and took off. She was having a hard time keeping up with her friend Abby, who now runs everywhere. So she decided it was time for her to start walking.

While in Tennessee we visited a pumpkin patch farm...

We went to the zoo...

We did some shopping...

We played at playgrounds...

We mostly just played all day long...

Then Hannah & Kristi took at 7.5 hour drive to Florida to visit Jeremy's parents. The drive was really good. No crying at all!! Hannah slept most of the trip and other times we sang songs, played peek-a-boo and she watched videos. It was a lot of fun.

Talking Hannah

Here is a video of Hannah saying a few words & sounds! She has quite an extensive vocabulary for being 11 months. haha

So far Hannah says; mama, dada, dog, cat, cracker, duck, sock, meow, quack quack and a few more that aren't as clear.

Just this week she started do say "Dat?" as in what's that. It is cute, she will point at something and say "Dat?" Then point at something else and say "Dat?" I am sure by next week it won't be as cute hehe.

Deer Season is Here!

Jeremy and my step-dad Ken hiked to the top of a mountain last week to go deer hunting! They were blessed with 4 deer. Almost more than they could pack out in several trips!

Hannah's 3rd Camping Trip

We decided to go camping rain or shine and the good Lord blessed us with an amazingly sunny and warm day! The nicest day all summer!

We went down to the white sandy beaches (our secret camping/halibut spot) and had a blast. The halibut fishing wasn't great but we did manage to catch 3 (I caught two and Jeremy landed one- imagine that!)Hannah had a blast crawling around in our new screen tent!

This thing is awesome! Not great on a rainy day but perfect for a sunny buggy day! I felt like I was in a tropical paradise!

She is a champ when it comes to camping. She loves boat rides and usually falls asleep on the boat.

A little while back Hannah and I went on a walk with our good friends Rachael & Kristina. We had to get in one last walk before Kristina went off to become a big bad Ak airlines worker!!

We walked from Kristina's house to Knudson Cove. It was a good walk. The weather was really warm, around 75 degrees. Awh I miss those days. The girls were a little weirded out by the bright sunshine.

Lately it has been cold, in the 50s and rainy. I miss real summers.

Saga of the sick baby girl

Sick Baby Girl

Thursday I decided to take Hannah to the medical clinic here in Kenai, as she wasn’t getting better like Dr. Herron said she would. Thankfully they were able to fit her in – none of the pediatric clinics are taking new patients. Baby boom or some business… :}

Oh so sick...

After x-rays and a nebulizer they sent me packing as fast as I could go - to the EMERGENCY ROOM! I was kinda freaked out by the intensity of the clinic doctor. I think she thought I’m a bad mom and was trying to freak me out. I started praying the minute I hopped in the truck.

So sad...

I started singing the song “My God will supply all my needs according to his riches and glory in Christ Jesus,” which is actually Philippians 4:19.

We made it to the hospital with minimal speeding, except my heart was going about a million miles an hour. When we arrived they were expecting us and immediately rushed us to a room. All the sudden 3 doctors and 2 nurses rushed in and started poking, prodding, peering, listening and more to my baby girl. It was around shift change time so every 2 minutes someone new was walking in the door to look at my baby. We both shed a few tears to say the least. Thankfully she was a champ and endured it pretty well, better than I would have if I were in her position.

After blood work and x-rays (they put her in this contraption which looked something similar to mid-evil torture chamber) they told me our baby girl has pneumonia and we were being admitted to the hospital!!! I started crying then...That morning I read in the paper Cameron Diaz's dad just died of pneumonia and he was 58, not a mere 6 months old...

Boy did I start praying even harder...

Prayer is a powerful thing

Hannah has drastically improved and is back to her smiley self, as long as the nurses and doctors quit poking and prodding at her. It seemed like every time she finally fell asleep someone would come in and wake her up. Last night she was down and out – counting serious sheep, when along came her night nurse to hook up her antibiotics to her IV. Low and behold she woke her up. Then this morning the CAN came and wanted to wake her up to weigh her at 6am. Monster mom almost came out. I said, no you will not wake my baby up. Come back later and they did!

Thankfully today, Saturday, we got to go home!! I started lobbying all the nurses on Friday morning to convince the doctor to let us go home and do out-patient antibiotics. (Thanks to some advice from my personal nurse Jenn.) Praise the Lord it worked! This morning the doctor came in and said, “How would you feel about going home today and coming back in the evenings to do the antibiotics?” I said YES PLEASE!!!

Hannah is feeling much better!

Now we are home and she is getting good sleep! Thank you for all your prayers. We have two more rounds of antibiotics then a drs visit on Monday. I pray he will give her a clean bill of health and we can start enjoying our vacation!

Candi & Sunny (Shylo's mom and brother)

Hannah & Kristi made it to Kenai! Hannah LOVES the dogs!! The first night we were here she was so happy to see them. She kept trying to grab them and eat their noses! It was really cute because they were so interested in her too! (For those who don't know, Kristi's mom breeds Labrador retrievers and has somewhere around 11 dogs! Only 3 are inside though.)

That all changed the next morning, because Hannah got the flu! She had the beginnings of the cold before we flew up here but it went full bore on Sunday. Her fever has been ranging from 101-103.5 for the past few days. The poor baby is miserable.

On Sunday after church my dad and step-mom through a party for Hannah with all the family but the princess couldn't attend her own party cause she was so sick. She's only been waking up long enough to eat then falls right back to sleep. I thank the Lord at least she is eating. It's been a bummer because we can't do anything or visit anyone. :(

Last night she was up from 3-4:30 coughing then crying then coughing then crying. After a few minutes of that I turned the shower on hot and closed the bathroom doors. The steam helped but she was still crying so I stripped her down and put her in the bath. She fell asleep in the bath! Then I wrapped her up and put her back to bed! Amazingly I was able to get her diaper and pjs back on without making her cry again! :) WOOHOO

I think her fever broke last night because she finally smiled at me for the first time in 3 days! It is sad when your happy, smiley baby turns into a fussy, cry baby.

Please pray she will continue on this road to health so we can get out and visit family and friends.

Hannah's First Camping Trip

This past weekend we decided to have some family time away from home. So we took Hannah on her first camping trip. She had a blast and was really good. She even helped Dad drive the boat and watch for logs!

We took a 27 mile boat trip to Grandpa Bob's cabin. I was worried about whether she would like the boat and be ok in her life jacket for that long. Amazingly, Hannah slept almost the whole way over and back. On the way back it was pretty bumpy but that didn't faze her a bit. Grandpa Bob, Shylo and Kenai went along with us. Hannah wasn’t the only one who slept on the boat ride! Shylo found herself a real nice pillow. I am not sure how comfy Bob was though.

Hannah didn’t take good naps on the camping trip because she was so excited about the tent she borrowed from her friend Rachael. Thankfully she was happy even without naps.
When I put her in the tent she was laying straight but after a few mins she turned herself all around :)
We also took her out to pull the shrimp pots. (I forgot the camera L ) She thought those shrimp were pretty cool. She tried to grab one but since it was still alive I wouldn’t let her get it. I am sure it would have gone straight to her mouth!

We look forward to many more family camping trips!

Walk & Roll

Now her dad wants her to start walking! NOOOOOOOO

Airplane Food

When I was a little girl I remember my dad feeding me and pretending my spoon was an airplane and my mouth was the hanger. Well the other day Jeremy did the same thing with his little girl. It was hilarious. Unfortunately I couldn't find the camera. But today I was ready with the camera!

We are so blessed to have a risen Lord!

Oh what a blessed day we had. After church we went over to the Wickert's house for lunch. Helen made an OUTSTANDING prime rib, the best I've had in a LONG time.

Hannah had a good time playing with her friends and showing off her pretty Easter dress. She wanted to say a special thank you to her Grandpa Baum for the pretty dress.

I was sitting on the floor next to Hannah yesterday and Shylo decided to join us. Hannah LOVES Shylo so she rolled over to play with her. In turn Shylo laid down and gave Hannah LOTS of love. Shylo adores Hannah, it is really cute.

Family Walk & The Kelty Pack

On Saturday morning our whole family went for a walk! Dad and his girls had a blast!

Hannah is now 5 months old so we tried out her Kelty Adventure Backpack. Wow it was awesome. Daddy & Hannah both loved it! She did fall asleep but that didn't last long. To much to see in this big world!

Before the Kelty, Jeremy would put Hannah in the Ergo and zip her in his coat.

The dogs love going for walks! Shylo carried this stick the entire way. We tried to get pictures of Kenai but she was to fast to capture clearly! The tweety birds are out...
