I love summer with all the cucumbers and zucchini growing in my garden. I'm always looking for great ways to make them and if I find a way without cooking that is even better.
Ingredients:
4 cucumbers, thinly sliced (I use a mix of cucumber and zucchini)
1 small white or purple onion, thinly sliced
1 cup white vinegar
1/2 cup water
3/4 cup white sugar (or zylitol)
1 tablespoon dried dill, or to taste
Directions:
Toss together the cucumbers, zucchini and onion in a large bowl.
Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions.
Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.

Caprese appetizer
Straight from the garden.
Fresh basil and tomatoes on fresh mozzarella (not from garden) then sprinkled with salt, pepper, balsamic vinegar and olive oil! Yummy!
